Day 8 of 25 Recipes of Christmas: Raisin Granola

This is not necessarily a holiday recipe, but this is the only time of the year that I make this. I usually have this on hand for our New Year’s Eve celebration.

Raisin Granola

2 cups old fashioned oats
1 cup shredded coconut
1/2 cup wheat germ
1 1/2 cups chopped walnuts or almonds
1 teaspoon salt
1 14 oz. can sweetened condensed milk
1/4 cup oil
1 1/2 cups raisins

Combine oats, coconut, wheat germ, nuts and salt in a large bowl. Stir in condensed milk; add oil and mix thoroughly. This will be very stiff and sticky. Spread mixture on a shallow baking pan lined with parchment or oiled foil. Bake in 300 degree oven, stirring occasionally for 1 hour or until golden. Remove from oven and stir in raisins while still warm. Store in tightly covered container.
