Garlic Soup

This is one of the easiest soup recipes I’ve ever made. And it is surprisingly good. The garlic is not too overpowering and the cayenne and chile pepper flakes gives it just enough “kick” to keep it from being boring. Try it, you may be as surprised as I was the first time I made it.

Garlic Soup

Serves 4

2 small  onions, chopped
3 cloves  garlic, minced
1/2 cup  butter or margarine
6 tablespoons  all-purpose flour
6 cups  chicken broth
1/2 teaspoon  cayenne pepper
pinch chile pepper flakes (opt)

In a large saucepan, saute onions and garlic in butter until tender, about 2-3 minutes. Stir in flour until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer,  uncovered for 15 minutes. Stir in cayenne and chile pepper flakes.

I’ll serve this with Baked Ham and Cheese Sandwiches.
