Grocery Cart Challenge Recipe Swap~Peanut Butter Oatmeal Bars

I have a very vivid memory of my mother serving my brother and me these cookies when we came home from school. I once tried to simplify this recipe by using store-bought frosting, but it just didn’t taste right to me. So it is worth the extra effort to follow this recipe. The glaze is optional, but it looks so pretty. I hope you will like this too.

Peanut Butter Oatmeal Bars

1/2 cup shortening
1/2 cup granulated sugar
1/2 cup brown sugar
1/3 cup peanut butter
1/2 teaspoon vanilla
1 egg
1/4 cup milk
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup quick cooking oats
2 cups confectioner’s sugar
1/4 cup cocoa
3 tablespoons melted butter
2-3 tablespoons boiling water
1/2 teaspoon vanilla
2 tablespoons butter
1 cup confectioner’s sugar
3-4 teaspoons milk
Cream together first 5 ingredients until fluffly. Add egg and milk; beat well. Sift together flour, baking soda, and salt. Add to creamed mixture. Beat just till well combined. Stir in oats. Spread evenly in greased 13x9x2″  pan or two 8″ or9″ square pans. Bake at 350 degrees for 20 minutes. Cool.

Sift together confectioner’s sugar and cocoa. Quickly stir in the melted butter, water and vanilla. Beat till smooth. Spread quickly and evenly over cooled cookies in pan.

Heat and stir butter till golden brown. Stir in confectioner’s sugar and milk. Drizzle over frosting.

Cut into squares to serve.
